DELICIOUS MINESTRONE RECIPE
Ingredients:
- 1 large onion, chopped
- 4 cloves of garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 red pepper, diced
- 2 large potatoes, diced
- 1 can of crushed tomatoes (28 oz)
- 4 cups of vegetable broth
- 1 cup of green beans, trimmed and cut into 1-inch pieces
- 1 cup of corn kernels
- 1 can of kidney beans, drained and rinsed
- 2 tbsp of chopped fresh basil
- 2 tbsp of chopped fresh parsley
- Salt and pepper, to taste
- Parmesan cheese, for serving (optional)
Instructions:
Heat a large pot or Dutch oven over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.Add the diced carrots, celery, and red pepper and cook for an additional 5 minutes.Add the diced potatoes, crushed tomatoes, and vegetable broth to the pot and bring to a boil.Reduce the heat and let the soup simmer for 15-20 minutes, or until the vegetables are tender.Add the green beans, corn kernels, and kidney beans to the pot and continue to simmer for an additional 5-10 minutes.Stir in the chopped basil and parsley and season with salt and pepper to taste.Serve the minestrone soup hot with freshly grated Parmesan cheese on top, if desired.
