ITALIAN RECIPE OSSABUCO
Osso buco is a traditional Italian dish made with veal shanks braised in a flavorful broth with vegetables and white wine. Here's a recipe that you can use to make a delicious osso buco:
Ingredients:
- 4 veal shanks
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 1/4 cup olive oil
- 2 medium onions, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup dry white wine
- 1 cup chicken or beef broth
- 1 can (28 ounces) whole tomatoes, crushed
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
Instructions:
- Preheat the oven to 325°F (165°C).
- Season the veal shanks with salt and pepper and dust them with flour.
- In a large, heavy Dutch oven or oven-safe pot, heat the olive oil over medium-high heat. Add the veal shanks and brown them on both sides, about 5 minutes per side. Remove the shanks from the pot and set them aside.
- Add the onions, carrots, celery, and garlic to the pot and cook until the vegetables are soft, about 10 minutes.
- Pour in the white wine and cook for another 2 minutes, scraping the bottom of the pot to release any browned bits.
- Add the broth, crushed tomatoes, thyme, rosemary, and bay leaf to the pot and stir to combine.
- Return the veal shanks to the pot, making sure they are partially submerged in the broth. Cover the pot with a lid and place it in the oven.
- Bake the osso buco for 2 1/2 to 3 hours, or until the meat is very tender and falling off the bone.
- Serve the osso buco hot with some of the cooking liquid spooned over the top. Enjoy!
