RISOTTO TASTASAL

Ingredients:
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 onion, chopped
- 2 tablespoons olive oil
- 1/2 pound Tastasal sausage, diced
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions:
- In a large saucepan, heat the broth over medium heat until hot.
- In a separate large pot, heat the olive oil over medium heat.
- Add the chopped onion to the pot and cook until soft and translucent, about 5 minutes.
- Add the diced Tastasal sausage to the pot and cook until browned, about 8-10 minutes.
- Add the Arborio rice to the pot and stir well to coat with the oil.
- Add the white wine to the pot and stir until it has been absorbed by the rice.
- Add one ladleful of the hot broth to the pot at a time, stirring constantly and allowing the broth to be absorbed before adding the next ladleful.
- Continue to add the broth and stir for about 20-25 minutes, or until the rice is cooked to your desired consistency.
- Turn off the heat and stir in the grated Parmesan cheese.
- Season with salt and pepper to taste, and serve immediately.
