ITALIAN TRADITIONAL POTATO GNOCCHI

            simple recipe for making traditional potato gnocchi

Ingredients:

    • 2 lbs. russet potatoes
    • 1 egg, beaten
    • 1 tsp. salt
    • 1 1/2 - 2 cups all-purpose flour

Instructions:

    1. Wash the potatoes and poke several holes in each one with a fork. Bake in a 400°F oven for 45 minutes to an hour, or until tender. Remove from oven and allow to cool slightly.
    2. Once the potatoes are cool enough to handle, peel them and pass them through a ricer or mash them with a potato masher.
    3. On a clean work surface, make a well with the mashed potatoes. Add the beaten egg, salt, and 1 1/2 cups of flour to the center of the well.
    4. Using a fork, start incorporating the flour into the potatoes, starting from the inside and working your way out. Once the dough comes together, start kneading it with your hands until it forms a smooth, soft dough. If the dough is too sticky, add more flour as needed.
    5. Cut the dough into four pieces, and roll each piece into a long rope about 1 inch in diameter. Cut the ropes into 1-inch pieces.
    6. Roll each piece of dough into a ball, and then press it down with the tines of a fork, making indentations on one side and ridges on the other.
    7. Bring a large pot of salted water to a boil. Gently drop in the gnocchi and cook until they float to the surface, about 2-3 minutes.
    8. Remove the gnocchi from the water with a slotted spoon and serve immediately with your favorite sauce.
