simple recipe for making traditional potato gnocchi
Ingredients:
- 2 lbs. russet potatoes
- 1 egg, beaten
- 1 tsp. salt
- 1 1/2 - 2 cups all-purpose flour
Instructions:
- Wash the potatoes and poke several holes in each one with a fork. Bake in a 400°F oven for 45 minutes to an hour, or until tender. Remove from oven and allow to cool slightly.
- Once the potatoes are cool enough to handle, peel them and pass them through a ricer or mash them with a potato masher.
- On a clean work surface, make a well with the mashed potatoes. Add the beaten egg, salt, and 1 1/2 cups of flour to the center of the well.
- Using a fork, start incorporating the flour into the potatoes, starting from the inside and working your way out. Once the dough comes together, start kneading it with your hands until it forms a smooth, soft dough. If the dough is too sticky, add more flour as needed.
- Cut the dough into four pieces, and roll each piece into a long rope about 1 inch in diameter. Cut the ropes into 1-inch pieces.
- Roll each piece of dough into a ball, and then press it down with the tines of a fork, making indentations on one side and ridges on the other.
- Bring a large pot of salted water to a boil. Gently drop in the gnocchi and cook until they float to the surface, about 2-3 minutes.
- Remove the gnocchi from the water with a slotted spoon and serve immediately with your favorite sauce.
